Food & Nutrition Practical Tip: Plan Before You Cook!

In a Food and Nutrition practical examination, learners sometimes focus so much on cooking that they forget the importance of careful planning and organisation. However, a successful practical examination does not begin when you pick up your knife—it begins during the planning session.

Before starting, think carefully about your time, order of work, equipment, cooking methods, preparation techniques, presentation and hygiene. Consider which tasks can be carried out simultaneously while another dish is cooking. This is known as dovetailing, and it allows you to make effective use of the time available.

A well-planned sequence helps you work efficiently, reduces unnecessary waiting time and prevents you from rushing towards the end. Your plan should also allow enough time for checking that dishes are properly cooked, completing final preparation, presenting your food attractively and clearing your work area.

My advice: Before you begin cooking, visualise your entire practical session from preparation to final presentation. Ask yourself: What should I do first? What can I do while another dish is cooking? Which tasks need to be completed last?

Remember, good organisation is just as important as good cooking!
