The Practical Test is not just about producing tasty food — it is about showing planning, organisation, practical skills, time management and presentation. Here are some important tips based on recent Cambridge examiner reports.
⏱️ DURING THE PLANNING SESSION
1️⃣ READ THE QUESTION CAREFULLY!
Underline the key requirements. Make sure every dish you choose answers exactly what the question asks.
2️⃣ CHOOSE DISHES STRATEGICALLY.
Do not simply choose your favourite recipes. Select dishes that demonstrate a good range of ingredients, skills, mixtures and cooking methods.
3️⃣ THINK BALANCED!
If asked to prepare a balanced main meal, make sure the dishes complement one another nutritionally and as a meal. Avoid menus that are unnecessarily heavy in carbohydrate or protein.
4️⃣ MAKE SURE YOUR DISHES ARE SKILFUL.
For higher marks, choose dishes involving several manipulative skills, appropriate consistencies and suitable cooking methods. Avoid relying heavily on convenience foods unless the question requires them.
5️⃣ PLAN TO DOVETAIL.
Do not prepare one dish completely before starting another. Show clearly how you will work on one dish while another is cooking, baking, steaming or setting. Dovetailing is essential for effective time management.
6️⃣ YOUR TIME PLAN MUST BE REALISTIC.
Include preparation, cooking, washing-up and serving. Give accurate cooking times and oven temperatures. In the special points column, state how you will know when food is properly cooked — for example, “golden brown and springy to touch” or “pasta cooked until al dente.”
7️⃣ CHECK YOUR INGREDIENT QUANTITIES.
Calculate the total quantities carefully and ensure that everything required for all dishes is included on your shopping list.
👩🍳 DURING THE PRACTICAL TEST
8️⃣ START WITH A PLAN — AND FOLLOW IT!
Keep your preparation sheets with you and use your time plan to stay organised. However, work intelligently if something takes longer or shorter than expected.
9️⃣ WORK CLEANLY AND SAFELY.
Practise good personal hygiene, prevent cross-contamination and keep your work area organised throughout the examination.
🔟 DO NOT LEAVE DISHES UNFINISHED.
Recent examiner reports noted that a significant number of candidates failed to complete all five planned dishes, which affected their marks. Manage your time so that every required dish is completed and served.
🍽️ PRESENTATION MATTERS!
Think about colour, texture, shape, portion size, garnishes and appropriate serving dishes. Your presentation should suit the theme of the question — a party display should look like a party, while a main meal should be presented as a main meal.
✨ FINAL GOLDEN RULE:
Don't wait until the examination day to practise. Cook several dishes together during your revision sessions. Practise dovetailing, timing, serving and presentation until they become second nature.
